The Science of Soft Serve

Soft serve is a classic sweet treat that people have enjoyed since the 1940s. Today, it remains popular in ice cream trucks like Mister Softee and dessert shops worldwide. It is still ice cream, but it has a softer and lighter texture than grocery store versions. Many people debate its origin, and names like Tom Carvel, the Dairy Queen family, and even Margaret Thatcher often appear in its history.

How It Is Made

Soft serve is very similar to regular ice cream in terms of ingredients and production. The University of Guelph explains that it is ice cream at a different stage of freezing. After mixing the base, a machine freezes part of the water and adds air into the mixture at the same time. This process creates a light texture, and ice cream usually contains 30% to 60% air, which prevents it from becoming too dense.

Soft Serve vs Regular Ice Cream

At this stage, the mixture becomes soft serve when the machine dispenses it directly into a cone. The added air makes it smooth, creamy, and easy to serve immediately. However, the same mixture becomes hard ice cream when placed in a container and frozen further. The difference comes from temperature and air content, which changes the final texture and firmness.
